Description

A flexible and fresh salmon pasta recipe you can make with pantry staples and leftover or freshly cooked salmon.


Ingredients

Scale

8 oz linguine or penne

1 tbsp olive oil

1 garlic clove, minced

1 cup cherry tomatoes (halved)

1 lemon, juiced

1 cooked salmon filet, flaked

Salt and pepper, to taste

Fresh basil, chopped (optional)


Instructions

1. Boil pasta according to package instructions, reserve 1/2 cup pasta water.

2. Meanwhile, heat olive oil and sauté garlic and tomatoes until soft.

3. Add flaked salmon and lemon juice, stir gently.

4. Toss drained pasta into the pan with salmon.

5. Add a splash of pasta water and fresh basil.

6. Serve warm with a side of garlic bread.

Notes

Use leftover grilled or baked salmon.

Add spinach or arugula for extra greens.

For a creamy twist, stir in 2 tbsp cream cheese at the end.
