Description
Rustic golden Sicilian bread made with semolina flour and sesame seeds — soft inside, crunchy outside.
Ingredients
2 cups warm water
2 tsp active dry yeast
4 cups semolina flour
1 tsp salt
1 tbsp olive oil (optional)
2 tbsp sesame seeds
Instructions
1. Activate yeast in warm water for 5–10 minutes.
2. Mix semolina flour and salt in a bowl.
3. Add yeast water and stir until a dough forms.
4. Knead 8–10 minutes until smooth.
5. Let rise 1½–2 hours.
6. Shape loaf and let rise 30–45 minutes.
7. Brush with olive oil and sprinkle sesame seeds.
8. Bake at 375°F (190°C) for 30–35 minutes.
9. Cool before slicing.
Notes
If semolina isn’t available, mix all-purpose flour + cornmeal.
For gluten-free, use a blend with xanthan gum.
Toast sesame seeds for deeper flavor.
