Description
A moist, fruity strawberry cake made with almond flour and no sugar. Naturally sweet and perfect for summer baking.
Ingredients
1 ½ cups almond flour
1 ripe banana, mashed
3 large eggs
1 tsp baking powder
1 tsp vanilla extract
¼ tsp salt
1 cup chopped fresh strawberries
Instructions
1. Preheat oven to 350°F and line or grease a 9-inch cake pan.
2. Mash the banana and whisk in eggs and vanilla extract.
3. Add almond flour, baking powder, and salt. Mix gently.
4. Fold in chopped strawberries.
5. Pour into pan and smooth top. Bake 30–35 minutes.
6. Cool in pan 10 minutes, then transfer to wire rack to cool.
Notes
Use extra ripe banana for best sweetness.
Cool completely before slicing to keep it from crumbling.
Try serving with plain yogurt or coconut cream.
