Ingredients
4 boneless, skinless chicken breasts
1 tsp salt
½ tsp black pepper
2 tsp Italian seasoning (divided)
3 tbsp olive oil (divided)
1 tbsp minced garlic
⅔ cup roasted red peppers
1 cup heavy cream
2 tbsp Parmesan cheese (optional)
2 tbsp crumbled feta
Fresh basil for garnish
Instructions
1. Season chicken with salt, pepper, and Italian seasoning.
2. Heat olive oil in skillet; sear chicken until golden and cooked through.
3. Sauté garlic and roasted red peppers with olive oil and seasoning.
4. Blend pepper mixture with cream and Parmesan until smooth.
5. Return sauce to skillet and simmer until slightly thickened.
6. Add chicken back, coat in sauce, and heat through.
7. Garnish with feta and basil before serving.
Notes
Use half-and-half or coconut cream for lighter or dairy-free versions.
