This sizzling spaghetti recipe is a flavor-packed twist on the Italian classic, using hot olive oil to bloom garlic and herbs directly over tender pasta.
Ingredients
1 pound spaghetti, cooked al dente
2/3 cup extra virgin olive oil
8 cloves garlic, minced
3 tsp fresh parsley (1 tsp reserved)
2 tsp fresh oregano
1½ tsp fresh rosemary
3 tsp fresh basil
1 tsp red pepper flakes
Salt and black pepper to taste
1–2 tbsp grated Parmesan cheese
Instructions
1. Cook spaghetti until al dente. Drain and set aside.
2. Place pasta in a large mixing bowl with all chopped herbs, garlic, and pepper flakes.
3. Heat olive oil in a small saucepan until shimmering but not smoking.
4. Carefully pour the hot oil over the herb mixture on the spaghetti.
5. Toss quickly to combine and evenly coat.
6. Add salt, pepper, and Parmesan to taste.
7. Garnish with remaining parsley and serve hot.
Notes
Use a deep bowl to avoid splattering when pouring oil.
Add chili oil or cream for flavor twists.
Best served immediately while hot.
