Description
Crispy oven-roasted smashed carrots coated in olive oil, garlic, and Parmesan cheese — a simple, flavorful side dish that’s tender inside and golden outside.
Ingredients
1 lb carrots, peeled or baby carrots
2 tbsp olive oil
2 cloves garlic, minced
1/4 tsp salt
1/4 tsp black pepper
1/3 cup grated Parmesan cheese
1/2 tsp smoked paprika (optional)
Fresh parsley for garnish
Instructions
1. Boil carrots in salted water until fork-tender (10–15 minutes).
2. Drain and cool slightly, then preheat oven to 425°F (220°C).
3. Place carrots on parchment-lined tray and smash with a glass.
4. Drizzle with olive oil and sprinkle with garlic, salt, pepper, and Parmesan.
5. Roast 20–25 minutes until golden and crisp.
6. Garnish with fresh parsley and serve hot.
Notes
Use baby carrots for faster prep.
Dry well before roasting for maximum crispiness.
Swap Parmesan for nutritional yeast for a vegan version.
Perfect with ranch, garlic aioli, or lemon dip.
