Description

A hearty, creamy smoked turkey soup with sausage and veggies, perfect for cozy nights.


Ingredients

1 lb smoked turkey, shredded 4 Andouille sausages, sliced 1 celery stalk, chopped 3 carrots, chopped ½ yellow onion, chopped 1 large tomato, diced 1 bulb garlic, minced 2 tbsp olive oil 2–3 cups stock 1 cup heavy cream 3–4 tbsp Cajun seasoning


Instructions

1. Sauté celery, carrots, and onion in olive oil. Add garlic and sausage; cook until browned. Stir in turkey and tomato. Pour in stock and simmer 20 minutes. Add cream and seasoning; simmer 5 minutes. Serve hot and enjoy.

Notes

Replace heavy cream with coconut milk for dairy-free version. Add spinach or corn for extra nutrition. Freezes well up to 3 months.
