Soft Lemon Blondie Dessert Bars are chewy citrus dessert bars made with fresh lemon juice, lemon zest, and topped with a sweet lemon glaze.
Ingredients
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
1 large egg
1 tablespoon fresh lemon juice
1 tablespoon lemon zest
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup powdered sugar
1–2 tablespoons lemon juice
1 teaspoon lemon zest (optional)
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper
2. In a bowl whisk melted butter and sugar until smooth
3. Add egg, lemon juice, and lemon zest then mix until combined
4. In another bowl whisk flour, baking powder, and salt
5. Fold dry ingredients into wet ingredients until a smooth batter forms
6. Spread batter evenly into prepared pan
7. Bake for 20–25 minutes until edges are lightly golden and center is set
8. Allow bars to cool completely
9. Mix powdered sugar with lemon juice to create glaze
10. Spread glaze over cooled bars and allow to set before slicing
Notes
Use fresh lemon juice for the best citrus flavor
Do not overbake to keep the blondies soft and chewy
Chill the bars for 20 minutes before slicing for clean edges
Add blueberries or white chocolate chips for delicious variations
