Description
A classic Southern Tomato Pie with ripe tomatoes, mayonnaise, cheese, and a flaky crust.
Ingredients
4 large ripe tomatoes
1 pre-baked 9-inch pie crust
1 cup mayonnaise
1 cup shredded sharp cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup fresh basil, chopped
Salt and pepper to taste
Instructions
1. Slice tomatoes, sprinkle with salt, and let drain on paper towels for 30 minutes.
2. Preheat oven to 350°F (175°C).
3. Layer tomatoes, cheese, basil, and mayonnaise mixture in pie crust.
4. Bake for 35–40 minutes or until golden brown.
5. Let cool slightly before slicing and serving.
Notes
Use peak-season tomatoes for the best flavor.
Blind-bake the crust to prevent sogginess.
Allow pie to cool slightly before cutting for cleaner slices.
