Description
A silky, spiced carrot coconut soup with a creamy coconut base, ginger, and turmeric for warmth and comfort.
Ingredients
1 tbsp coconut oil
1 onion, diced
3 garlic cloves, minced
1 tbsp grated ginger
1 tsp cumin
½ tsp turmeric
½ tsp coriander
1.5 lbs carrots, chopped
4 cups vegetable broth
1 can coconut milk
Salt and pepper to taste
Instructions
1. Heat coconut oil and sauté onion, garlic, and ginger until fragrant.
2. Add spices and stir to bloom.
3. Add carrots and broth, simmer until tender.
4. Blend until smooth, then stir in coconut milk.
5. Adjust seasoning and serve warm with toppings.
Notes
Use full-fat coconut milk for creaminess.
Add lime juice or chili oil for extra flavor.
