Creamy, fruity, and no-bake! These Strawberry Cheesecake Truffle Balls combine cream cheese, strawberries, and white chocolate into bite-sized dessert perfection.
Ingredients
8 oz cream cheese, softened
1 cup crushed graham crackers
1/2 cup finely chopped freeze-dried strawberries
1/4 cup powdered sugar
1/2 tsp vanilla extract
8 oz white chocolate or candy melts
2 tbsp crushed freeze-dried strawberries (for garnish)
Instructions
1. Beat cream cheese, powdered sugar, and vanilla until smooth.
2. Stir in crushed graham crackers and chopped freeze-dried strawberries.
3. Refrigerate mixture 30–60 minutes until firm.
4. Roll into 1-inch balls and freeze for 15–20 minutes.
5. Melt white chocolate; dip each ball and garnish with strawberry crumbs.
6. Let set at room temperature or refrigerate.
Notes
Store in refrigerator up to 5 days.
For stronger flavor, add strawberry extract or lemon zest.
Use gluten-free graham crackers if desired.
