Description
A quick Mediterranean sun-dried tomato bread dip infused with olive oil, garlic, and fresh herbs. Perfect with warm crusty bread.
Ingredients
¾ cup extra virgin olive oil
3 cloves garlic, minced
¼ cup sun-dried tomatoes, chopped
¼ cup chopped olives
2 tbsp chopped basil or parsley
1 tsp balsamic vinegar
Salt & pepper to taste
¼ tsp red pepper flakes (optional)
2 tbsp grated Parmesan (optional)
Instructions
1. Warm olive oil with minced garlic until fragrant and lightly golden.
2. Stir in sun-dried tomatoes, olives, herbs, vinegar, and Parmesan.
3. Season with salt, pepper, and red pepper flakes.
4. Let rest 10 minutes before serving.
5. Serve with crusty bread or crackers.
Notes
Use high-quality olive oil for best results.
For vegan option, skip Parmesan and use nutritional yeast.
Can be made ahead and stored for up to 1 week.
