A warm, smoky, and hearty Sweet Potato & Black Bean Chili — perfect for cozy nights.
Ingredients
2 medium sweet potatoes, diced
2 cans black beans, drained
1 can crushed tomatoes
1 onion, chopped
1 bell pepper, chopped
3 cloves garlic, minced
2 cups vegetable broth
2 tbsp chili powder
1 tsp cumin
1 tsp smoked paprika
Salt and pepper to taste
Instructions
1. Sauté onions, peppers, and garlic in olive oil.
2. Add sweet potatoes and spices, stir well.
3. Add tomatoes, beans, and broth.
4. Simmer 25–30 minutes until thickened.
5. Adjust seasoning and serve warm.
Notes
Top with avocado, cilantro, or sour cream.
