Ingredients
2 large sweet potatoes
1 cup all-purpose flour
1 egg (optional)
1 tsp salt
2 tbsp butter or olive oil
Fresh sage or herbs for garnish
Instructions
1. Bake sweet potatoes at 400°F until tender.
2. Peel and mash the flesh until smooth.
3. Add flour and egg, mix gently until dough forms.
4. Cut dough into pieces and roll into gnocchi shapes.
5. Boil until gnocchi float to the surface.
6. Drain and toss in brown butter or sauce.
Notes
Avoid over-kneading dough for a light texture.
Bake instead of boiling sweet potatoes to prevent excess moisture.
