Creamy Turtle Cheesecake with a chocolate cookie crust, rich caramel sauce, smooth chocolate ganache, and crunchy toasted pecans.
Ingredients
2 cups chocolate cookie crumbs
5 tablespoons melted butter
24 oz cream cheese, softened
1 cup granulated sugar
3 tablespoons all-purpose flour
1 cup sour cream
2 teaspoons vanilla extract
3 large eggs
3/4 cup caramel sauce
3/4 cup semi-sweet chocolate chips
1/2 cup heavy cream
1 cup toasted pecans
Instructions
1. Preheat oven to 325°F (163°C) and mix chocolate cookie crumbs with melted butter.
2. Press the crumb mixture firmly into the bottom of a 9-inch springform pan and bake for 8 minutes.
3. Beat softened cream cheese until smooth, then mix in sugar and flour.
4. Add sour cream and vanilla extract and mix until creamy.
5. Add eggs one at a time, mixing slowly after each addition.
6. Pour the cheesecake batter over the baked crust.
7. Place the pan in a water bath and bake for 70–75 minutes until the center is slightly set.
8. Turn off the oven and let the cheesecake cool slowly with the oven door slightly open.
9. Refrigerate for at least 4–6 hours or overnight until fully chilled.
10. Heat heavy cream and pour it over chocolate chips to make ganache, stirring until smooth.
11. Drizzle caramel sauce and chocolate ganache over the cheesecake and sprinkle with toasted pecans before serving.

Use room temperature cream cheese for a smooth filling.
Avoid overmixing the batter to prevent cracks.
A water bath helps the cheesecake bake evenly.
