Creamy and comforting, this White Chicken Lasagna Soup brings the classic lasagna flavor to a cozy bowl.
Ingredients
1 lb chicken breasts
1 tbsp olive oil
2 tbsp butter
1 onion, diced
1 carrot, diced
1 celery stalk, diced
3 cloves garlic, minced
1/4 cup flour
6 cups chicken broth
1 cup heavy cream
8 lasagna noodles, broken
3/4 cup Parmesan cheese
Salt, pepper, and herbs to taste
Instructions
1. Sear chicken in oil and butter; remove.
2. Sauté onion, carrot, celery; add garlic.
3. Stir in flour to make a roux.
4. Gradually add broth and cream with seasonings.
5. Add noodles and cook until tender.
6. Shred chicken; return to pot with cheese.
7. Serve hot with garnish.
Notes
Use rotisserie chicken for faster prep. Add spinach or mushrooms for extra flavor.
