Description

A bright and crunchy Winter Salad Recipe made with mixed greens, citrus, pomegranate, feta, and pecans — ready in 15 minutes!


Ingredients

Scale

7 cups mixed greens

1¼ cups orange or mandarin segments

½ cup pomegranate seeds

½ cup crumbled feta cheese

½ cup candied pecans

⅓ cup olive oil

2 tbsp apple cider vinegar

2 tsp Dijon mustard

1 tbsp honey

1 tbsp minced shallot

Salt and pepper to taste


Instructions

1. Peel and segment oranges or mandarins.

2. Wash and dry the greens completely.

3. Combine greens, citrus, pomegranate, feta, and pecans in a large bowl.

4. Whisk olive oil, vinegar, mustard, honey, shallot, salt, and pepper until smooth.

5. Drizzle dressing over salad and toss gently to coat.

6. Serve immediately.

Notes

Use kale or spinach if preferred.

Swap feta for goat cheese or vegan feta.

Maple syrup makes a great vegan substitute for honey.

Add avocado or pear for a twist.
